1.     Sheet Pan Chicken Fajitas

Sheet pan meals are perfect for busy weeknights, as they require minimal prep work and can be customized to your family’s taste. These sheet pan chicken fajitas are a family favorite, and they can be ready in under 30 minutes.

Ingredients:

  • 1 pound boneless, skinless chicken breasts, cut into strips
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 red onion, sliced
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • Tortillas, for serving

Directions:

1.     Preheat the oven to 425°F. Line a large sheet pan with parchment paper.

2.     In a large bowl, toss the chicken, bell peppers, and onion with olive oil, chili powder, cumin, garlic powder, salt, and pepper.

3.     Spread the chicken and vegetables evenly on the sheet pan.

4.     Bake for 20-25 minutes, until the chicken is cooked through and the vegetables are tender.

5.     Serve with tortillas, and your favorite toppings like guacamole, sour cream, and salsa.

6.     One-Pot Pasta with Spinach and Tomatoes

This one-pot pasta with spinach and tomatoes is a quick and easy meal that’s perfect for busy weeknights. Plus, with only one pot to clean, it’s a time saver too!

Ingredients:

  • 1 pound whole wheat spaghetti
  • 1 can diced tomatoes
  • 2 cups baby spinach
  • 2 cloves garlic, minced
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • 4 cups water
  • Parmesan cheese, for serving

Directions:

1.     In a large pot, combine the spaghetti, diced tomatoes (including the juice), baby spinach, garlic, basil, salt, pepper, and water.

2.     Bring the mixture to a boil over medium-high heat. Reduce the heat to low and simmer for 10-12 minutes, stirring occasionally, until the pasta is cooked and the sauce has thickened.

3.     Serve hot with Parmesan cheese.
